Cajun seasoning is one we love so much that we decided to make our own. We like to keep a small bottle or bag in the pantry. Nowadays, you can find Cajun spice mixes at most grocery stores, but making your own gives you absolute control over the flavor. Want a little more kick? Add a little extra cayenne pepper. Do you like this onion flavor? Throw in some more onion powder. There are many variations of Cajun seasoning, so play around with it until you find a blend that makes your taste buds sing like the bayou at night.

Composition Notes

  • Chicken breasts: For faster cooking, cut the chicken breasts in half lengthwise and filet them. Cut horizontally, keeping the knife parallel to the cutting board.
  • Cajun Seasoning: This mixture can be purchased at most grocery stores in the spice aisle, but we prefer to make our own. Give it a try – Homemade Cajun Seasoning.
  • Language: It is slightly thicker than spaghetti noodles with a flat surface similar to fettuccine. You can also use spaghetti or fettuccine. We did it with all three!
  • Bell pepper: For quick slicing, cut off the top and bottom of the pepper, then take the remaining round piece and cut it in half. Lay each piece flat on a cutting board, remove the seeds and white membrane, then cut into long strips.
  • Red onion: As it cooks, it gets sweeter and adds more color to the food.
  • Mushrooms: Cremini or white mushrooms work great. Find them in the refrigerated area of the produce section at your grocery store.
  • Heavy cream: Heavy Whipping Cream is also labeled. If you need to lighten things up, you can use half and half, but it will be a thinner sauce.

The Perfect Fry

Roasting your chicken to perfection is easier than you think! The trick? A hot pan and a little patience. Before adding the chicken, preheat your pan to medium so it sizzles right away and locks in all those juices. Don’t crowd the pan – give each piece room and let sit for about 2 minutes before flipping. That’s how you get that golden brown crust that everyone loves! Once browned, lower the heat to medium-low to cook the inside without burning the outside. Always check that the internal temperature has reached 165°F before removing it from the heat.

Heat Level Adjustment

If you like a spicy kick, there are many ways to turn up the heat on this dish! Increase the amount of cayenne pepper in your Cajun seasoning or add a pinch of red pepper flakes to your veggies. You can even sprinkle on some of your favorite hot sauce for an extra punch. For those who prefer a milder flavor, leave out the cayenne pepper in the homemade Cajun seasoning, or choose a pre-made spice mix labeled mild.

Reheat in the oven over medium-low heat or microwave in 1-minute increments at 50% power, stirring between each pass, until heated through.
